A New Year In Cabo

There’s nothing as magnificent as Gods creation. And what better place to appreciate and celebrate Gods Glory than Cabo…Im so grateful here surrounded by the beautiful ocean, natural landscapes and good company, all the while reflecting on a complex year gone by, yet optimistic about the possibilities and many opportunities that lie ahead.

I have to say, this trip to Cabo was planned well before Covid-19 hit…and has been postponed twice, it was as anticipated as it was overdue.  Yet the reality is we remain in the thick of a pandemic, therefore once we made the decision to take the trip it was imperative we proceed with caution.  I felt a sense of relief upon receiving our negative test results prior to leaving the country. We checked Mexico’s Government mandates and restrictions, the resorts restrictions, the CDC’s recommended guild-lines as well as international airline travel and health restrictions and followed every requirement accordingly.

Knowing the fact that HEPA filters refresh the cabin air every 2 to 4 minuets, which lowers the risk of contracting Covid-19 during air travel, put us at ease as we’d be in the air for 4 plus hours.

Its no secret that I have a passion for all things travel, and I love more than anything to share the deets when I discover and visit someplace amazing. Cabo is always a great idea with its beautiful beaches, outdoor dining, water, desert and mountainous activities.  But a little over year or so ago I was put on to a brand spanking new first-class resort in Cabo; the first of it’s kind…scheduled to open in the Fall of 2018. I did some investigating and the the words most used to describe the resort were luxurious, oasis, captivating, magnificent and relaxing…everything I’m attracted to, so I booked it.  I have to tell you; The Solaz Luxury Collection Resort was all that to say the least…a masterpiece in design and a sanctuary for guests seeking an immersive destination experience, Solaz Resort celebrates the magical connection between the awe-inspiring desert and vibrant blue waters of the Sea of Cortez at every turn. 

With it’s open architecture and decor the lobby is more than a work of art and the window to Paradise, its a safe environment during these uncertain times, and the same open-ness is mimicked throughout the entire establishment reducing the concentration of air-born pollutants, contaminants and any viruses…this along with practices recommended by the CDC was definitely safety reassurance.
Might I add; the Resorts “Safer Way To Get Away” initiative, the contactless Check-in and Check-out as well as being selected as one of the first properties to receive VERIFIED status by Share-care Health Security and Forbes Travel Guide definitely added to that sense of assurance.

Cabanas are on a first come first serve bases, but with maximum occupancy being altered due to Covid -19, copping a Cabana was never an issue.

By the beach…near the sea…what a wonderful place to be.
Of all the luxuries we where blessed to experience during our time here, this ended up being my favorite place every day…a hammock, sunken fireplace, ocean breeze, sunrise/sunset and a cocktail…all in one place.

I enjoyed our morning stroll to breakfast at Cascabels every morning…taking in the mix of desert vegetation and sustainable lush flora. So Beautiful!

Our stay was not all inclusive, although we did receive many perks…a delicious cook to order breakfast everyday being one of them.

With safety being priority…we pretty much dined alfresco our entire vacation (the norm in Cabo). I’m still in awe after being able to lock in a reservation and dine cliff-side at the most sought after restaurant in Cabo; Sunset Monalisa. Carved into a cliff at the tip end of the Baja Peninsula (often described as the end of the earth) and overlooking the Bay…Sunset Monalisa gifted us with the most breathtaking views of the majestic sunset…not to mention the Novel Mediterranean Cuisine and the hospitality were bar none. We truly enjoyed a safe and delicious culinary experience.

The Omnia Skywalk; the entrance to the Vidanta Resort which leads you to Casa Calavera is one of the most instagrammable destinations for locals and tourist alike.
Casa Calavera; another delicious culinary experience. It creatively combines authentic Mexican cooking techniques, recipes and ingredients with contemporary, innovative and an entertaining twists. Casa Calavera has an open-air, “feet in the sand” feel with interiors that feature traditional Mexican calavera art…a nod to the colorful Día de los Muertos theme; translation: The Day of the Dead (a Mexican multi-holiday celebrated that involves family and friends gathering to pray for and to remember friends and family members who have died).

Red Snapper, zarandeado style; served w/ fennel salad, grilled veggies, rice & beans Thanks to neighboring farms in Todos Santos and Miraflores, fresh is the primary ingredient on the menu at most of the local restaurants, with the transitioning to all organic fresh-produce provided by farms in these towns. I have to say each and every meal I consumed was an absolute culinary sensation.

NYE is the most anticipated night of the year…this year more than ever…during my lifetime! We attended an affair on the beach hosted by Taittinger Champagne; an evening strategically planned for safety and filled with grand ambiance, curated cocktails, and culinary delights. We participated in the Spanish Tradition; “Twelve Grapes,” before the clock strikes 12, you eat 12 grapes each one represents a wish for 12 months of the year. We proceeded to welcome 2021 with all the pomp and circumstance of an elaborate next-level Firework Show over the ocean…absolutely beautiful! NYE @ Solaz Beach more than met our expectations…it was an Entire Event, a vibe unmatched I will never forget and will definitely do again.

And the show begins
Another amazing dining experience was at Nido’s. (Yes this nest-like work of art is a restaurant) Located in the Viceroy Hotel, this is the place to expand your horizons in a setting like no other, definitely not your ordinary robatayaki (Japanese table-side grilling) restaurant. Although we feasted on the finest and most delicious cuisine…it was the nest-like structure, suspended between the ocean and land, and surrounded by water mirrors that impressed me the most, an adventure in it’s own right; the ambiance accompanied by the impeccable sunset…was so majestic.

As the heart and soul of the city; a visit to the Marina is a must, not only can you charter a cruise here for whale watching or a visit to the Arch, but there’s great entertainment, shopping and dining as well. Also a great place to mingle with the locals.
We decided to do land activities.  If your’e ever visiting the area and are interested in horseback riding or riding the ATV’s I highly recommend Rancho Carisuva; an eco-tourism Park right outside of Cabo San Lucas. The hospitality is unmatched, the rates are great, the horses are well groomed and trained and their ATV’s are safely maintained.
Guiding the reins of the sweetest mix breed horse named Pistachio was one of my trips highlights as we explored the desert and mountain trails. Being that I’m not a novice rider, it definitely helped that Pistachio’s temperament was patient, he and I had an instant chemistry, I couldn’t be more comfortable, which made for an awesome experience.
Trotting along side the white-sand beach on Pistachio and Mule was quite an enchanting moment.

It was the end of turtle season during our stay (August – December) however if your’e lucky enough (and lucky for them) sometimes baby turtles can be seen crawling across the beach to the water due to undiscovered nest.
